Eggplant and Halloumi Pizza with Spiced Lamb and Lemon

INGREDIENTS

 

1 pizza dough

1/2 cup flour, for rolling the dough

2 tbs olive oil

1 tbs flaky salt

1/2 lb ground lamb

2 cloves garlic, minced

1 tsp chili flakes

1 tsp dried oregano

1 tbs olive oil, for lamb

1 eggplant, sliced 1/2 inch rounds

1 tbs olive oil, for eggplant

6 oz halloumi cheese, sliced

GARNISHES

1 lemon, zest only

parsley, minced

 

DIRECTIONS

preheat oven to 400°F.

I. lightly flour the countertop and roll out the pizza dough using a rolling pin or your hands. place on a pizza tray or baking tray

II. using a pastry brush, place the olive oil on the dough then top with flaky salt

III. heat 1 tbs olive oil in a skillet and cook the ground lamb with the minced garlic until cooked through. season with salt, pepper, chili flakes and oregano. using the remaining 1 tbs olive oil sear the eggplant slices in a hot skillet until golden brown

IV. spread the lamb, halloumi, and eggplant on top of the dough, then place in the oven and cook until golden brown, about 15 minutes

V. garnish with lemon zest and parsley. slice into 8 pieces and serve hot
