Maple and Thyme Cherry Tart

INGREDIENTS

 

pie dough

3 pints cherries

1/2 cup maple syrup

1/4 tsp salt

1 tsp vanilla extract

4 sprigs, fresh thyme

3 tbs cornstarch

 

DIRECTIONS

preheat oven to 350°F.

I. roll out pie dough and place it into a tart pan. using a fork prick the bottom of the tart dough. place in the oven and par-cook through (about 10 minutes)

II. while the tart shell is baking, place the cherries, thyme, salt, vanilla and maple syrup into a sauce pan on medium-low heat. allow the cherries to macerate in the maple syrup stirring occasionally

III. once about a 1/4-1/2 cup of juice has been released from the cherries strain off the juice into a bowl and whisk in the cornstarch. pour the mixture into the cherries

IV. turn the heat to low and gently fold the cherries until a thick jam like glazed is achieved

V. place the cherries into the tart shell and finish baking (about 10 minutes) until crust is golden brown. allow to cool before serving

Born and raised in Detroit, MI, Amanda was always drawn to food. She observed how it had the power to bring people together, help us grieve the loss of a loved one, and nourish and repair us from within. In 2016, Amanda McLemore gave up the grocery store for an entire year to see if it was possible to better connect with the local food grown within and around her city. In this year she learned much about growing her own food, sourcing local and packaged free ingredients and how to preserve the seasons; all for her health and the health of the planet.
