Fresh Oysters with Cucumber Mezcal Granita

INGREDIENTS

 

1 lime, juiced

2 cucumbers

1 shallot

1/4 cup red wine vinegar

1/4 tsp freshly ground pepper

1 oz mezcal

1/2 tbs cilantro

1/2 serrano chili pepper

1/4 tsp salt

12 fresh oysters

 

DIRECTIONS

I. place lime juice, cucumbers, shallot, red wine vinegar, pepper, mezcal, cilantro, serrano chili, and salt into a blender and blend until smooth.

II. pour mixture into a large freezer safe container and freeze completely until solid

III. using a fork, scrape the granita into shards

IV. shuck oysters and place them on top of ice. spoon the granita over the oysters and serve

Born and raised in Detroit, MI, Amanda was always drawn to food. She observed how it had the power to bring people together, help us grieve the loss of a loved one, and nourish and repair us from within. In 2016, Amanda McLemore gave up the grocery store for an entire year to see if it was possible to better connect with the local food grown within and around her city.
