Blistered Green Beans with Feta and Herb Vinaigrette
INGREDIENTS
1/4 shallot
1 tsp dijon mustard
4 tbs sweet white vinegar
1/4 cup olive oil
2 sprigs oregano
4 sprigs parsley
1 lb green beans
1 tbs neutral oil
salt and pepper, to taste
dukkah, to garnish (optional)
DIRECTIONS
I. place shallot, dijon, vinegar and herbs into a blender. while the blender is running slowly add in the oil in a slow stream. season with salt to taste
II. in a large sauté pan or wok heat the neutral oil on high heat. add in the beans and cook until blistered and tender, about 2-5 minutes
III. place beans into a warm bowl and toss with feta, enough vinaigrette to coat and season to taste with salt and pepper
