Asparagus and Green Garlic Soup

INGREDIENTS

 

2 tbs butter

1/4 cup green garlic, sliced

2 lbs asparagus, sliced

1/4 tsp smoked chili flakes

2 cups garlic parmesan broth or stock

3/4 cup cream

salt, to taste

GARNISHES

2 tbs feta, crumbled

1/4 tsp smoked chili flakes

1 tbs dukkah

1 lemon, zest only

1 tbs olive oil

edible flowers

 

DIRECTIONS

I. melt the butter in a pot. sauté the green garlic until slightly softened. add in the asparagus and smoked chili flakes season to taste with salt and sauté for about two minutes

II. add the broth or stock and cover allowing the soup to simmer for about ten minutes or until the asparagus and garlic are tender

III. place soup in a blender and blend on high until smooth. while the blender is still running add in the cream. adjust seasoning as needed

IV. pour soup into serving bowls and garnish with feta, dukkah, smoked chili flakes, lemon zest, olive oil, and edible flowers

V. serve hot or cold

Born and raised in Detroit, MI, Amanda was always drawn to food.
